Simple Fresh Pea Soup

This soup is so simple it should be illegal. No, it shouldn’t, but it will surely impress your dinner guests with its delicate flavor and beautiful coloring. Plus, did I mention how simple it is?

You Will Need:

6 cups fresh peas; frozen works if they aren’t in season
4 cups vegetable stock
Salt
Pepper
2 tbsp vegan butter
1 onion

To Prepare:

In a soup pot, sauté the onion in the butter for 4-6 minutes, until fragrant and golden in color. Add the vegetable stock and peas and simmer 10 – 15 minutes. Blend in batches until smooth, return to pot and sprinkle with a pinch of salt and pepper. Simmer 10 – 15 more minutes, and voilà! You’ve made a beautiful, protein rich supper in less than an hour, providing you didn’t make a big green mess of the kitchen while trying to blend..
