You Will Need:
6 cups fresh peas; frozen works if they aren’t in season
4 cups vegetable stock
Salt
Pepper
2 tbsp vegan butter
1 onion
To Prepare:
In a soup pot, sauté the onion in the butter for 4-6 minutes, until fragrant and golden in color. Add the vegetable stock and peas and simmer 10 – 15 minutes. Blend in batches until smooth, return to pot and sprinkle with a pinch of salt and pepper. Simmer 10 – 15 more minutes, and voilà!
