This is the recipe me and my roommates use
Ingredients
1 cup rolled oats
1 cup whole wheat flour
2 teaspoons baking powder
2 tablespoons flax seeds (ground)
1/2 teaspoon salt
1 1/2 tablespoons agave nectar (if not vegan, use honey)
1 tablespoon vegetable oil (or coconut!)
1 cup non-dairy milk (I like soy or rice)
Optional: Feel free to add 1/2 tablespoon of cinnamon, 1/2 cup of nuts, or a 1/2 cup of dried fruit for a sweeter bread.
Directions:
Preheat oven to 450 degrees F
Grind oatmeal in a food processor or blender. This makes for a smoother texture. In a large bowl, combine oatmeal, flour, baking powder, flax and salt. If using and optional ingredients, add these as well. In a separate bowl, dissolve agave (or honey) in oil then stir in the soy milk. Pour wet ingredients on top of dry and stir until dough is formed. Form the dough into a ball (or any other fun shape) and place on a lightly oiled cookie sheet.
Bake for 20-25 minutes, cool (or not) and enjoy!
