Alex’s Bitchin’ Butternut Wedges

My friend Alex made these squash wedges for me, and they are crazy good. I always eat my butternut squash with cinnamon and a drizzle of agave, but this dish blew my mind a bit.

You will need:
1 butternut squash
1/4 cup olive oil
2 tbsp your fav. hot-sauce (although a few tsp of Cayenne would also do the trick)
1 fresh jalapeno, diced
1 lime

Instructions
Preheat the oven to broil. Slice the squash into wedges. Whisk up the olive oil and hot sauce and drizzle onto squash wedges. Nestle diced pepper into each wedge, and stick in the oven for 10-12 minutes, or until nice and crispy at all the edges. Keep an eye on them so they don’t burn. Squeeze lime on for a zesty finish.

Before cooking...

Crispy and on the plate along side a mexican salad fiesta with guac and rice and beans..

      I had the oven on at 425 degrees for another dish so I put the prepared squash in too and they came out delicious in about 30 mins and I didn’t have to watch them as in a broiler.
