Simple and Sweet (I’m Too Lazy to Cook)

To me, nothing is more satisfying than a really simple meal. Don’t get me wrong—I love a complex meal. You know, the kind you labor over for a while and are proud to feed to others. But a simple meal—like a basic grain, protein and veggie combo with a drizzle of balsamic vinegar and a sprinkle of gomasio—is seriously satisfying to me. Coming home from a long day at work followed by an intense yoga class, I love throwing some veggies in the broiler and some quinoa in my rice cooker before hopping in the shower. When I come out, I have a simple and healthy meal waiting for me that took no effort at all. Life is complicated enough—cooking doesn’t have to be.

Some of my favorite go-to simple staples this season are baked sweet potatoes with a sprinkle of cinnamon, flash sautéed greens, roasted Brussels sprouts with a squeeze of citrus, grains cooked in coconut milk, and squash of any kind broiled and sprinkled with a dash of cayenne and a squeeze of lime.

    Soup!
    Even here in the tropics it is my simple,healthy and soul satisfying comfort food. Before I head to the warm ponds at 6 am to do my morning laps, I get out my soup pot, course chop some onions, carrots, celery, kombucha squash (peel and all) and put it all into the pot. Add a cup of lentils. A cup of Quinoa. A can of tomatoes. Cover it all with water. Add some chopped ginger and tumeric, garlic if you like, s&p and some cumin. When I return, before I hop into the shower I turn it to high. When I get out of the shower I turn it to simmer and 30 minutes later when I get back from my morning fruit surveillance of the orchard, my breakfast is ready! Don’t knock soup for breakfast until you try it:~))

    pasta with marinara sauce and broccoli :)
    simple, quick, and delicious. this is my default choice when I come home from work exhausted and have nothing else in the pantry.

    Sag or lentils thrown in with some tamarind or chli paste and whatever veggies I have in the fridge. As of lately a few spoonfuls of canned pumpkin are necessary. I usually add cumin, a bit of miso or veggie borth and then choose to go with the more meditteranean (oregano, rosemary) or else more delicious tumeric, indian style. I miss okra.
